For this week's meal I decided to make a one pan skillet breakfast for the whole house! Here's how it went
Ingredients List
- 1 Onion
- 1 Green Pepper
- About 1 pound of potatoes
- 1 pound pork sausage
- 6 eggs
- Salt, Pepper, Garlic salt to taste
Process
I began by browning the sausage in the skillet on low heat along with a little bit of butter. While the sausage was browning I diced up the onion, green pepper, and potatoes, the results of which can be seen in the picture above. Once the sausage was fully browned I added the diced veggies and potatoes to the skillet along with some more butter to help keep the pan lubricated. Once everything was in the skillet I turned the heat up to high and stirred the mix to keep anything from scorching. Salt, pepper, and garlic salt were added now to taste. Once the onions were translucent and the potatoes were fully cooked I removed the mix from the pan. I then used the skillet to cook the eggs quickly and served the eggs on top of the breakfast mix. Served the pile of food with toast, as can be seen in the Intro picture.
Reflections
The Good:
The meal tasted great! the veggies were fresh and I feel like I nailed the seasoning! I had enough food to serve 3 people and still have leftovers for about two more breakfasts.
The Things That Need Work:
The skillet I was using was not big enough to fit all the food I was cooking comfortably, meaning that the cooking time took almost 25 minutes once I added the veggies and potatoes. Next time i would use a bigger pan or cook in batches. I also thought that the butter and pork fat from the sausage would be enough to cook the eggs without having to add more lubricant. This didn't work out and the eggs stuck to the skillet resulting in the improvised scramble that is shown in the Intro picture. The final thing i would change would be to add the potatoes to the pan before the peppers and onions to allow them to cook a bit more.
