Ingredients:
- Potatoes
- Salt
- Black Pepper
- Olive Oil
- Thyme
Steps:
- Preheat oven to 425°
- Wash and dry all potatoes.
- Slice and dice potatoes into 1/4 in. to 1 in. pieces.
- Pour a drizzle of olive oil on potatoes
- Season with salt, pepper, and a sprinkle of thyme.
- Mix potatoes so every piece is lightly coated in oil and seasoning.
- Place potatoes on tray.
- Place tray in oven for 20-25 minutes, shaking up the potatoes about half way through as to evenly brown them.
Reflection:
This week's technique was slicing and dicing. To do this I cut the potatoes in half, then 2 or 3 even cuts along the length and 2 or 3 even cuts along the width to make 1/4 in. to 1 in. pieces. I really enjoyed doing this as I have been cooking for myself all summer so I have some practice. One problem I occasionally run into is the potatoes sticking to the tray. To fix this I just make sure to oil them up enough and not cut them too small.
This recipe was not new to me as I enjoy making it regularly as a snack or a side for a meal.
Pantry:
I live alone so my pantry is small, but it's perfect for me. I always use the salt, pepper, and olive oil. I also have white pepper, soy sauce, garlic salt, and herbs such as thyme, rosemary, and basil for the times that I really want to kick my meal up a notch. My fridge is also pretty empty. I only have a tub of salted butter, some mushrooms, and a tray of ground beef. Typically I try to get eggs as well, but I didn't get around to it.
